Vari Rice and Shengdana Aamti (Sawa Millet Rice with Peanuts Gravy)

This is a famous Fasting meal in Konkan (Maharashtra). Vari Rice is Bhagar / Samo / Sawa. This may be common in other regions on India. But I’m not sure if Shengdana Aamti (Peanut Gravy) is popular in other regions. Both these recipes are very easy and they make a delicious fasting meal. Eventhough we don’t keep any fast, I cook this meal sometimes. It’s a good change from the standard meal.


For Vari Rice

Raw Vari Rice / Sago / Sawa Millet / Bhagar 1 cup

Ghee (Clarified Butter) 2 teaspoon

Cumin Seeds ½ teaspoon

Fresh Scraped coconut 2 teaspoon

Chopped coriander 1 teaspoon

Lemon Juice 1 teaspoon

Crushed Green Chillies ½ teaspoon

Salt to taste

For Shengdana Aamti

Roasted peanuts 1 cup

Fresh Scraped coconut 3 teaspoon

Green Chillies 3-4

Sugar 1 teaspoon (adjust as per taste)

Aamchoor (Mango Powder) ½ teaspoon

Kokum 3-4

Cumin Powder ½ teaspoon

Ghee (clarified butter) 1 teaspoon

Cumin Seeds ½ teaspoon

Chopped coriander ½ teaspoon

Salt to taste


Vari Rice

1. Wash Vari rice and leave it for 10 minutes.

2. In a pan, heat 1 teaspoon of ghee. Add cumin seeds. Wait for crackle. Add crushed green chillies. Add Vari Rice and sauté till Rice gets dried. It will take 5-6 minutes on low flame.

3. Meantime, boil 1 and ¼ cup of water.

4. Add boiling water to sautéed Vari Rice.

5. Add Lemon juice, coconut, coriander and salt.

6. Cook covered till rice is cooked. Add little water if it’s too dry. The amount of water required to cook depends on the type of Vari Rice.

7. Add 1 teaspoon ghee; mix.

8. Tasty Vari Rice is redy.

Shengdana Aamti

1. In a grinder, add roasted peanuts, coconut, chillies, aamchoor, salt, cumin powder and sugar. Add little water and grind into a smooth paste.

2. In a pan, hear ghee. Add cumin seeds, wait for crackle. Add peanut paste.

3. Add water to adjust consistency. Add kokum cut into pieces.

4. Bring to boil. Cook on low flame for 5 minutes.

5. Add chopped coriander. Mix.

6. Delicious Shengdana Aamti is ready.

Serve hot Vari Rice with steaming Shengdana Aamti and some home made ghee (Clarified butter). It tastes awesome.
