Chakali is a Popular Maharashtrian Snack. There are different ingredients used while making Chakali. But the one made using Bhajani (Flour of roasted grains) tastes the best. Also there are different ways of making Chakali. This recipe uses the Steamed flour for making Chakali. I’ve provided recipe for making Bhajani also. But to begin with my Tips.

If you don’t have Chakali Bhajani, use flour of all ingredients mentioned in the Bhajani recipe below; mix them and roast it on low flame for 3-4 minutes. Use this mixture as Bhajani. I’ve tried this and it makes tasty Chakali -just like Bhajanichi Chakali.

Tips for making Perfect Chakali

1. There are 2 important things in Chakali – 1. The Bhajani (Flour of roasted grains) and 2. Amount of Oil (मोहन) you add in the flour. If any of these goes wrong, Chakali will not comeout well.

2. While making the Bhajani – lightly roast the grains. Roast only till the colour of grains change.

3. How much Oil (मोहन) you should add in the flour. Best is to add little less that suggested in the recipe. Because it Chakali is not Crisp, you can add more oil after heating it in the flour and make Chakali. For this make a batch of 2-4 Chakali to begin with and check them. After doing the required changes make the rest of Chakali.

4. Also check the taste of this first batch of Chakali. If you need to add anything, do so and mix the flour.

5. Most importantly, add less Salt to start with. After checking the taste of first batch, you can adjust the salt.

6. Sometimes Chakali spreads in the oil while deep frying. Reason for this is too much oil (मोहन) added to the flour. To resolve this problem, take some Bhajani (roasted grains flour), add chilly powder, turmeric powder, salt, asafoetida and mix. Do not add any oil / butter. Bind the dough using hot water and mix it with the dough prepared earlier. Of course, for this you have to save some Bhajani to begin with. Do not use all the Bhajani in first batch.

7. Sometimes, Chakali breaks while using the mould. If this happens, knead the dough again.

8. Make sure you deep fry Chakali on medium flame. If oil is not hot enough, Chakali will soak oil while frying.

9. If you fry Chakali on high flame then Chakali will be crisp initially but will be soft as it gets cool. For this ensure you fry Chakali on medium flame especially when there is less oil in the wok.

10. Right amount of Turmeric Powder gives a nice bright colour to Chakali. If you add more Turmeric Powder, Chakali will be little dark.

11. Do not add Kashmiri Chili Powder in Chakali dough. This also affects the colour of Chakali. Add regular Chili Powder that you use in kitchen.

Ingredients

For Bhajani (1 cup = 250 ml)

Raw Rice 3 cup

Split Bengal Gram (Chana Dal) ¾ cup

Split Black Gram (Udid Dal) 1 cup

Whole Wheat 1/8 cup

Thick Flattened Rice (Thick Poha) 1/8 cup

Cumin Seeds ½ cup

For Chakali

Bhajani 4 cup

Water 4 cup

White Butter / Oil 4 tablespoon

Salt to taste

Turmeric Powder ¼ teaspoon

Red chilly Powder 1 teaspoon

Asafoetida ¼ teaspoon

Sesame Seeds 2 tablespoon

Carom Seeds (Ajwain) 1 tablespoon (optional)

Instructions

For Bhajani

1. Roast all ingredients separately till colour of grain changes. Do not overroast.

2. On cooling grind into a fine powder.

For Chakali

1. In a deep pan, heat 4 cups of water.

2. When it starts boiling add Butter/oil, Salt, Turmeric Powder, Chilly Powder, Asafoetida and mix.

3. Take the pan away from the heat. When bubbles stop, add Bhajani and mix.

4. Put the pan back on Gas stove and steam for 2 minutes on low flame.

5. Switch off the gas. Add Sesame seeds in the pan and keep the pan covered for 2-3 hours.

6. Knead the dough properly. Use water if required.

7. Use Chakali Mould to make chakali shape.

8. Deep fry in hot oil on medium flame.

9. Take out fried Chakali on kitchen tissue.

10. Upon cooling, store in air tight container. Chakali will last for 15 days.

खमंग आणि खुसखुशीत भाजणीची चकली

चकल्या वेगवेगळ्या पद्धतीनं करतात. पण भाजणीची चकली सगळ्यात खमंग लागते. भाजणी बनवण्याच्या ही वेगवेगळ्या पद्धती आहेत. मी माझी भाजणी ही रेसिपी वापरून बनवते.
चकलीची भाजणी नसेल तर भाजणीच्या साहित्यात दिलेल्या जिन्नसांची पिठं एकत्र करून मंद आचेवर ३-४ मिनिटं भाजून घ्या. आणि हे मिश्रण भाजणी म्हणून वापरा. मी हे करून पाहिलं आहे आणि अगदी भाजणीच्या चकलीच्या चवीच्या चकल्या होतात.

चकली सुद्धा २३ प्रकाराने बनवतात. ही रेसिपी भाजणीची उकड काढून बनवलेल्या चकलीची आहे.

टिप्स

. चकलीत दोन महत्त्वाच्या गोष्टी . भाजणी आणि २. मोहन. ह्यापैकी काहीही बिघडलं तर चकली बिघडते.

. भाजणी करताना धान्य फार भाजू नका. ही भाजणी जरा कच्ची च असते.

. मोहन किती घालावं ? सुरवातीला मोहन कमीच घाला. कारण चकल्या खुसखुशीत झाल्या नाहीत तर पिठात आणखी तेल गरम करून घालता येतं. त्यासाठी २४ चकल्या तळून घ्या. गार झाल्यावर खाऊन बघा. सगळ्या चकल्या एकदम पाडून तळायला घेऊ नकामनासारख्या झाल्या तर सगळ्या चकल्या करायला घ्या.

. नवीन गृहिणींना पिठाची चव कळत नाही. हे पण सुरवातीच्या २४ चकल्या खाऊन बघा. काही कमी असेल तर घालून पीठ मळून घ्या.

. पिठात मीठ जरा कमीच घाला. चकली तळल्यावर मीठ पुढे येतं. आणखी लागलं तर घालता येतं.

. कधी कधी चकल्या फारच अलवार / खुसखुशीत होतात किंवा तेलात पसरतात / हसतात. ह्याचं कारण म्हणजे मोहन जास्त होणंअशा वेळी थोडी भाजणी घेऊन त्यात तिखट, मीठ, हळद, हिंग घाला. तेल / लोणी अजिबात घालू नकाकडकडीत  पाण्यात ही भाजणी भिजवून घ्या आणि आधीच्या पिठात नीट मिक्स करा. ह्यासाठी सगळी भाजणी एकदम भिजवू नका नाहीतर चकल्या रिपेअर करायला भाजणी उरणार नाही.

. कधी कधी सोऱ्याने चकली पाडताना चकलीचे तुकडे पडतात. अशा वेळी पीठ आणखी मळून घ्या.

. चकली तळताना मध्यम आचेवर तळा. तेल पुरेसं गरम नसेल तर चकली तेलकट होईल.

. चकल्या गॅसची आच जास्त  ठेवून तळल्या तर सुरुवातीला खुसखुशीत लागतील पण पूर्ण गार झाल्यावर नरम पडतील. जेव्हा तळणीतलं तेल कमी होतं तेव्हा गॅसच्या आचेकडे लक्ष द्या.

१०. चकलीच्या उकडीमध्ये हळद योग्य प्रमाणात घातली तर चकलीला छान रंग येतो. हळद जास्त झाली तर चकली काळपट दिसते.

११. चकलीच्या उकडीमध्ये कधीही काश्मिरी मिरचीचं तिखट घालू नका. त्यानेही चकलीचा रंग काळपट येतो. आपण नेहमी घरी वापरतो ते लाल तिखट घाला.

साहित्य (१ कप = २५० मिली )

भाजणीसाठी

तांदूळ ३ कप

चणा डाळ पाऊण कप

उडीद डाळ १ कप

गहू १/८ कप

पोहे १/८ कप

जिरं अर्धा कप

चकलीसाठी

भाजणी ४ कप

पाणी ४ कप

लोणी / तेल ४ टेबलस्पून

मीठ चवीनुसार

हळद पाव चमचा

लाल तिखट पाऊण एक चमचा

हिंग पाव चमचा

तीळ २ टेबलस्पून

ओवा १ टेबलस्पून (ऐच्छिक)

भाजणीची कृती

. सर्व साहित्य वेगवेगळं मंद आचेवर रंग बदलेपर्यंत भाजा. जास्त भाजू नका.

. गार झाल्यावर एकत्र बारीक दळून आणा.

चकलीची कृती

. एका पातेल्यात ४ कप पाणी गरम करायला ठेवा.

. उकळी आली की भाजणी आणि तीळ वगळून सर्व साहित्य घाला.

. पातेलं गॅसवरून उतरावा. पाण्याचे बुडबुडे येणं बंद झाले की भाजणी घाला आणि मिक्स करा.

. मंद गॅसवर झाकण ठेवून २ मिनिटं वाफ आणा.

. गॅस बंद करा. पिठात तीळ घाला आणि २३ तास झाकून ठेवा.

. पीठ छान मळून घ्या . जरूर पडल्यास पीठ मळताना हात पाण्यात बुडवून घ्या

. चकल्या पाडून गरम तेलात मध्यम आचेवर तळून घ्या.

. गार झाल्यावर हवाबंद डब्यात भरून ठेवा. चकल्या १५ दिवस छान राहतात.

  2. Hello सुधाताई, जर तयार पिठं एकत्र करून भाजणी करायची असेल तर कसं प्रमाण घ्यावं? एक कप 240 ml मध्ये वेगवेगळी पिठं वेगवेगळ्या वजनाची भरतात. कारण धान्य तर सर्व आहेत पण मिक्सर मध्ये तेवढं बारीक दळला जात नाही.

      धान्याच्या प्रमाणात पिठं घ्यायची. म्हणजे तांदुळाचं पीठ ३ कप वगैरे. पिठं ग्राममध्ये मोजून घेऊ नकोस. कारण प्रत्येक एक कप पिठाचं वजन वेगवेगळं असतं. मी असंच प्रमाण घेऊन चकल्या करते.
