Thalipeeth / Dhirde is Maharashtrian Chilla that has different types of flours either ground together or mixed together. I created this recipe using Chandan Batwa (Bathua / Bathuwa). I’d never used this leafy vegetable earlier. When I tasted the leaves, I thought it would taste good in Dhirde (Savory Pan Cake). I’ve used wheat flour and little semolina in the batter. With wheat flour, Dhirde does not become hard and dry. Even after 4-5 hours, Dhirde is nice and soft. This can be a good breakfast or snack or tiffin option.

Ingredients (For 8-9 Dhirde) (1 cup = 250 ml)

Chopped Chandan Batwa (Bathua/ Bathuwa) leaves 2 cups

Wheat flour 1.5 cups

Semolina Fine 2 tablespoon

Green Chilly Paste ½ teaspoon (adjust as per taste) or Piri Piri Powder 1 teaspoon

Tamarind dry pulp ½ teaspoon or buttermilk ½ cup or Curd 2 tablespoon

Turmeric Powder ½ teaspoon

Chopped/crushed garlic 6-7 cloves

Carom Seeds (Ajwain ) ½ teaspoon

White / Black Sesame Seeds 1 teaspoon

Salt to taste

Oil / Ghee / Butter / Clarified Butter for roasting

Instructions

1. Clean and Wash Chandan Batwa Leaves. Chop it fine.

2. In a pan, mix chopped leaves and all other ingredients except Oil / Ghee / Butter.

3. Add water as required to get the batter consistency of Idli batter (Thick Cake batter).

4. Heat a flat non stick Griddle. Sprinkle some water to reduce the temperature. Put 2 tablespoons of batter on the griddle, take some water in your palm and spread the batter evenly by using the fingers. Thickness should be like Paratha / Pan Cake. Be careful not to touch the hot Griddle.

5. Cover it with a lid and cook on medium flame. After 2-3 minutes, remove the lid, put a few drops of oil/ghee on Thalipeeth and flip it over.

6. Cook the other side till you get light brown spots.

7. Serve hot with Ghee / Home made Butter and / or any Chutney / Sauce. It’s very yummy.

चंदन बटव्याचं धिरडं

चंदन बटवा (बथुवा) ही हिवाळ्यात मिळणारी अतिशय पौष्टिक आणि टेस्टी भाजी आहे. ही भाजी घालून मी धिरडी करते. थंडीत गरमागरम पौष्टीक चविष्ट धिरडी सकाळच्या / दुपारच्या नाश्त्याला करायला एक वेगळा पर्याय आहे.

ही माझी स्वतः ची रेसिपी आहे. सर्व साधारणपणे आपण धिरड्यात बेसन घालतो टोमॅटो ऑम्लेट, भाज्यांचं ऑम्लेट बनवतो. मी ह्यात कणिक आणि रवा घालते. कधी शिळ्या पोळ्या उरल्या असतील तर त्या मिक्सर मध्ये सरसरीत वाटून घालते. त्यामुळे धिरडं छान लुसलुशीत होतं. बेसनाच्या धिरड्यासारखं दडदडीत होत नाही. ह्यात चंदन बटव्याची पानं बारीक चिरून घातली आहेत.

साहित्य (९ धिरड्यांसाठी ) (१ कप = २५० मिली )

चिरलेली चंदन बटव्याची पानं २ कप

कणिक दीड कप

बारीक रवा २ मोठे चमचे

दही २ मोठे चमचे / चिंचेचा कोळ अर्धा चमचा 

ठेचलेल्या मिरच्या अर्धा चमचा

लसूण ६७ पाकळ्या बारीक चिरून 

हळद अर्धा चमचा

ओवा अर्धा चमचा

काळे / पांढरे तीळ १ चमचा

मीठ चवीनुसार

तेल / तूप भाजण्यासाठी

कृती

. चंदन बटव्याची पानं स्वच्छ धुवून बारीक चिरून घ्या.

. एका वाडग्यात चिरलेली पानं आणि सगळे साहित्य घाला (तूप/ तेल वगळून)आणि एकत्र करा.

. जरूर पडल्यास पाणी घालून इडली च्या पिठासारखं भिजवून घ्या.

. एक नॉन स्टीक तवा गरम करा.

. तव्यावर पाणी शिंपडून २ चमचे पीठ घाला. हाताला थोडे पाणी लावून पीठ तव्यावर एकसारखं पसरा

. झाकण ठेऊन २३ मिनिटे भाजा. नंतर थोडे तेल/तूप घाला व धिरडं परता

. दुसरी बाजूही भाजून घ्या.

. स्वादिष्ट आणि पौष्टिक चंदन बटव्याचं  धिरडं तयार आहे. लोणी आणि चटणी बरोबर खायला द्या.

  1. Dhirde is chilla. Thalipeeth would be closer to makki roti type thing. Hand made roti, made without belan. \r\nBut love the recipe… Anyway Maharashtrian dishes are healthful and varied…

    • Thank you Rashmee for your comment. \nYes, apart from the differences you have mentioned,dough consistency is also different in thalipeeth and dhirde. But all these types are very tasty and healthy.
