Samosa is a popular Indian Snack. It’s available in almost all parts of India. There are different stuffings used for Samosa. The most popular one is Boiled Potato with Green Peas. Samosa is a deep fried snack with yummy stuffing and a crispy covering of All Purpose Flour (Maida). I generally don’t try to make these at home as they are easily available in Farsan shops. But during lockdown, all these shops are closed, and we were really missing these Samosas. So made them at home. Samosas were super yummy – better than the market bought Samosas.

Ingredients (Makes about 18-20 Samosa) (1 cup = 250 ml)

Potatoes 8 medium size

Ginger Paste 1 teaspoon

Green Chili Paste 1 teaspoon

Chili Powder ½ teaspoon

Mango Powder ¼ teaspoon

Chat Masala ½ teaspoon

Lemon Juice ½ teaspoon

Oil 1 tablespoon

Salt to taste

For Cover

All Purpose Flour (Maida) 2 cups

Melted Ghee (Clarified Butter) ¼ cup

Carom Seeds (Ajwain) 1 teaspoon

Salt to taste

Chilled water to bind the dough

Oil for deep frying Samosa

Instructions

To make Dough for Cover

1. In a bowl, mix All purpose flour, roughly crushed Carom seeds and Salt.

2. Add melted Ghee and mix well.

3. Bind a tight dough by gradually adding chilled water. Soft dough will not make crispy Samosa.

4. Cover the dough with a cloth and leave for 30 minutes.

To make Stuffing

1. Boil Potatoes.

2. Peel Potatoes and roughly mash them.

3. In a Pan, heat oil. Add Ginger, Chilies Paste. Sauté for 1 minute.

4. Add Mashed Potato, Salt, Mango Powder, Chili Powder, Lemon Juice, Chat Masala. Mix well.

5. Stuffing is ready. Spread it in a plate and leave to cool.

To make Samosa

1. Knead the dough for 3-4 minutes. Make lemon size balls.

2. Roll each dough ball into a medium thin circle. Using a knife cut it into 2 semicircles.

3. Each semicircle will be one Samosa. Apply little water to the straight side of the semicircle and fold the semicircle to form a cone. Seal the edges properly by gently pressing the dough.

4. Fill the stuffing in the cone leaving enough margin on the top to seal the cone. Apply water on the open edges of the cone and close them firmly to form a conical shape samosa.

5. Keep the filled Samosas in a plate covered by a cloth.

6. In a wok, heat oil for deep frying Samosa. Oil should be warm when you drop Samosa into it.

7. Gently drop filled Samosas in the oil. Do not try to fry too many Samosas in one batch. There should be enough room to flip Samosas.

8. Fry on low flame till the colour changes to golden brown. Keep flipping Samosas in between. It takes 10-12 minutes to fry each batch of Samosa.

9. Yummy, Super Crispy Samosas are ready.

10. Serve Hot Samosa with chutney / sauce.

समोसा चविष्ट कुरकुरीत नाश्ता

समोसा हा सगळ्यांचा आवडता चविष्ट नाश्ता आहे. समोसा वेगवेगळ्या प्रकारे करतात. बटाटे आणि मटार चं सारण घातलेला समोसा खूप लोकप्रिय आहे. आम्ही एका नेहमीच्या दुकानातून समोसे आणतो. पण लॉक डाऊन मध्ये सगळी दुकानं बंद असल्यामुळे समोसे घरी करून बघितले. खूप चविष्ट आणि कुरकुरीत झाले समोसे बाहेरच्या समोश्यापेक्षा छान

साहित्य (१८२० मध्यम आकाराच्या सामोश्यांसाठी) (१ कप = २५० मिली)  

बटाटे ८ मध्यम आकाराचे

आलं ठेचून १ टीस्पून

हिरवी मिरची ठेचून १ टीस्पून

लाल तिखट अर्धा टीस्पून

आमचूर पाव टीस्पून

चाट मसाला अर्धा टीस्पून

लिंबाचा रस अर्धा टीस्पून

तेल १ टेबलस्पून

मीठ चवीनुसार

समोसे तळण्यासाठी तेल

आवरणासाठी

मैदा २ कप

ओवा १ टीस्पून

तूप पातळ करून पाव कप

मीठ चवीनुसार

पीठ भिजवण्यासाठी गार  पाणी (फ्रिजचं)

कृती

पारीच्या पिठाची कृती

. परातीत मैदा, ओवा (हाताने चुरडून) आणि मीठ घालून एकजीव करा.

. पातळ केलेलं तूप घालून एकजीव करा.

. थोडं थोडं   थंडगार पाणी घालून घट्ट पीठ भिजवून घ्या.

. पिठावर एक कपडा घालून अर्धा तास झाकून ठेवा.

सारणाची कृती

. बटाटे उकडून सोलून घ्या. हाताने कुस्करून घ्या.

. एका कढईत तेल गरम करून त्यात आलं आणि हिरवी मिरची घालून १ मिनिट परतून घ्या

. कुस्करलेले बटाटे, मीठ, आमचूर, लाल तिखट, लिंबाचा रस, चाट मसाला घालून एकजीव करा.

. तयार सारण एका ताटलीत पसरून गार करायला ठेवा

समोसे बनवण्याची कृती

. पीठ ३४ मिनिटं मळून घ्या. लिंबाच्या आकाराचे गोळे करा.

. पिठाचा गोळा पातळ गोल आकारात लाटून घ्या आणि सुरीने त्याचे दोन अर्धवर्तुळाकार तुकडे करा. एका गोळ्याचे २ सामोसे होतात.

. एक अर्धवर्तुळाकार तुकडा  घेऊन त्याच्या सरळ भागाला थोडं पाणी लावा. आणि चण्याच्या पुडीसारखं दुमडून कोन (शंकू) बनवा. शंकूचा  एकावर एक येणारा भाग हाताने दाबून घ्या म्हणजे तो नीट चिकटेल आणि तळताना सुटणार नाही.

. शंकूमध्ये सारण भरा. फार कमी नको आणि फार जास्तही नको. शंकूच्या वरचा भाग रिकामा ठेवा. त्या भागाला थोडं पाणी लावून शंकू बंद करा. हाताने दाबून नीट चिकटवा

. सगळे भरलेले सामोसे एका कापडाने झाकून ठेवा.

. कढईत तेल कोमट करून त्यात सामोसे घालून मंद आचेवर गुलाबी रंगावर तळून घ्या. एका घाण्यात जास्त सामोसे घालू नका. सामोसे तेलात खाली वर करायला जागा ठेवा. एक घाणा तळायला १०१२ मिनिटं लागतात.

. गरमागरम चविष्ट कुरकुरीत समोसे चटणी / सॉस सोबत खायला द्या
