अळसाण्याचे तोणाक गोव्याची खास रेसिपी मराठी

Alsanyache Tonak is a popular vegetarian gravy subji in Goa. Alsane (अळसाणे) is a type Black Eyed Beans (Chavali) that is grown in Goa. Tonak (तोणाक) is any coconut based vegetarian spicy gravy. People relish this Tonak with Pav. Along with coconut, it uses different spices. Every family has their own recipe of this Tonak. This is my Mother-in-law’s recipe.

Alsane (अळसाणे)
Soaked Alsane (भिजवलेले अळसाणे)

Ingredients (serves 3) (1 cup = 250 ml)

Alsane (Goan Black Eyed Beans) ½ cup soaked for 5-6 hours

Potato 1 medium diced
Medium onion sliced
Fresh coconut
½ cup
Coriander seeds 1 teaspoon
Cumin seeds
¼ teaspoon
Poppy seeds
½ teaspoon
Bay leaf 1 small
Black pepper 6
Cloves 2
Red chili powder 1 teaspoon
Turmeric powder
½ teaspoon
Jaggery
½ teaspoon
Tamarind
½ teaspoon ball
Salt to taste
Oil 2 teaspoon

Instructions

1. Add ½ teaspoon oil in a wok. Roast Coriander Seeds, Cumin Seeds, Poppy Seeds, Bay Leaf, Black Pepper, Cloves together for 2-3 minutes. Take it out in a plate.
2. Add remaining oil
and Onions to the wok. Saute for 3-4 minutes.
3. Add
Coconut, saute till onions are translucent.
4. Add
Chili Powder, Turmeric Powder and mix.
5. Upon cooling, transfer
the roasted mixture to a grinder. Add roasted spices. Add Tamarind. Grind into a smooth paste. Add little water if required.

Add water to Alsane such that it covers Alsane fully. Cook on low flame.
7. When half cooked, add potatoes. Cook covered till
Alsane and potatoes are cooked.
8. Add ground mixture, salt and
Jaggery.
9. Bring the mixture to boil.
10. Adjust consistency
by adding / reducing water.
11. Serve hot with
Pav / Bread / Roti / Rice.

अळसाण्याचे तोणाक गोव्याची खास रेसिपी

अळसाण्याचे तोणाक ही एक गोव्याची लोकप्रिय रेसिपी आहे. अळसाणे हे एक चवळीसारखं कडधान्य आहे जे गोव्यात पिकतं. तोणाक म्हणजे नारळ घालून केलेली शाकाहारी मसालेदार रस्साभाजी. गोव्यात हे तोणाक पावासोबत खातात. हे तोणाक मालवणी वड्यांसोबत ही छान लागतं. नारळासोबत ह्या रश्श्यात वेगवेगळे मसाले घातले जातात. हे तोणाक करण्याची प्रत्येक कुटुंबाची एक खास रेसिपी असते. ही माझ्या सासूबाईंची रेसिपी आहे.

ही रेसिपी वापरून तुम्ही चवळी, राजमा, मूग वगैरेचे तोणाक करू शकता

 

Alsane (अळसाणे)
Soaked Alsane (भिजवलेले अळसाणे)

साहित्य (५ जणांसाठी) (१ कप = २५० मिली)

अळसाणे अर्धा कप ६ तास पाण्यात भिजवून

बटाटा १ मध्यम मध्यम आकाराचे तुकडे करून

कांदा १ मध्यम उभ्या काचऱ्या चिरून

ताजा खवलेला नारळ अर्धा कप

धने १ टीस्पून

जिरं पाव टीस्पून

खसखस अर्धा टीस्पून

तमालपत्र १ लहान

काळी मिरी ५

लवंग २

लाल तिखट १ टीस्पून

हळद अर्धा टीस्पून

चिरलेला गूळ अर्धा टीस्पून

चिंच अर्धा टीस्पून गोळा

मीठ चवीनुसार

तेल १ टीस्पून

कृती

. एका कढईत अर्धा टीस्पून तेल घालून त्यात धने, जिरं, खसखस, तमालपत्र , काळी मिरी, लवंग घालून मंद गॅसवर एकत्र २३ मिनिटं भाजा. एका ताटलीत काढून घ्या.    

. त्याच कढईत उरलेलं तेल आणि कांदे घाला. मंद आचेवर ३४ मिनिटं परता.

. खवलेला नारळ घालून मिश्रण कांदा पारदर्शक होईपर्यंत परता.   

. लाल तिखट आणि हळद घालून ढवळून घ्या.

. मिश्रण थंड झाल्यावर मिक्सरच्या भांड्यात घाला. त्यात भाजलेले मसाले घाला. चिंच घाला आणि थोडं पाणी घालून मिश्रण बारीक वाटून घ्या.   

. कढईत भिजवलेले अळसाणे घालून अळसाणे बुडेपर्यंत पाणी घाला. मंद आचेवर शिजवा.

. अळसाणे अर्धवट शिजले की त्यात बटाटे घाला. आणि मंद आचेवर शिजवा. अळसाणे आणि बटाटे दोन्ही नीट शिजले पाहिजेत.       

. वाटलेला मसाला कढईत घाला. मीठ आणि गूळ घाला आणि मिश्रणाला उकळी काढा.

. रस्सा दाट / पातळ हवा असेल त्यानुसार पाणी घाला / आटवा.

१०. चवदार तोणाक पाव / भाकरी / वडे / पोळीसोबत खायला द्या.
