Sukrunde (सुकरुंडे) – Delicious Sweet Fritters made using Bengal Gram and Jaggery

This is a delicious sweet dish from Goa / Mangalore; somewhat forgotten now-a-days. I’d not tasted this at all. Some years back my Mother-in-law suddenly remembered about this dish. I figured out the recipe and tried it. It is very easy to make and delicious too.

Ingredients (Serves 4 – 5) (1 cup = 250 ml)

Chana Daal (Bengal Gram) 1.5 cups

Crushed Jaggery 1.5 cups (you can add more / less as per desired sweetness)

Fresh scraped coconut 1 cup

Salt ¼ teaspoon

Cardamom powder ½ teaspoon

Maida (All purpose flour) 2.5 tablespoon

Turmeric Powder a pinch

Oil / Ghee (Thick Vegetable Oil) to deep fry

Instructions

1. Wash and cook Chana Daal in pressure cooker with 3 cups water, a pinch of Turmeric Powder and 2 drops of oil

2. In a thick bottom pan, mix cooked Chana Daal, jaggery and cook on low flame till mixture starts thickening. Keep stirring regularly.

3. Add a pinch of salt, fresh scarped coconut and keep cooking

4. When the mixture is almost dry switch off the gas, add cardamom powder and let the mixture cool. This is Puran (Filling) that we use for Puran Poli (Sweet Indian Bread) with added coconut.

5. In a bowl, add some water to All Purpose Flour to make batter like dosa batter (Medium consistency batter). Add a pinch of salt.

6. Make small balls of Puran.

7. Heat oil / ghee in a Wok.

8. Dip each Puran ball in the batter and slowly drop it in hot oil /  ghee. You can use a spoon for this if you find it easy.

9. Fry on low flame till you get golden yellow colour. Sukrunde are ready.

10. Serve hot Sukrunde with Desi Ghee (Clarified butter). Or it tastes delicious by itself too.

Notes:

1. You can skip fresh coconut. In that case reduce jaggery to 1 cup.

2. Instead of Maida, Besan (Bengal Gram Flour) can be used for making batter.

सुकरुंडे (गोवा / मंगलोर कडचा पारंपरिक पदार्थ )

सुकरुंडे हा गोवा / मंगलोर कडचा आता विस्मृतीत गेलेला पारंपरिक पदार्थ आहे. चण्याची डाळ आणि गूळ, नारळाचे पुरण घालून तळलेला हा पदार्थ अतिशय स्वादिष्ट लागतो.

काही ठिकाणी चण्याच्या डाळीऐवजी मुगाची डाळ घालून हा पदार्थ बनवतात

साहित्य (५ जणांसाठी ) (१ कप = २५० मिली )

चण्याची डाळ दीड कप

बारीक चिरलेला गूळ दीड कप (आवडीप्रमाणे कमी जास्त करा)

ताजा खवलेला नारळ १ कप

मीठ पाव चमचा

वेलची पावडर अर्धा चमचा

मैदा अडीच ते ३ टेबलस्पून

हळद चिमूटभर

तेल / तूप तळायला

कृती

. चण्याची डाळ धुवून ३ कप पाणी, चिमूटभर हळद आणि २ थेम्ब तेल घालून प्रेशर कुकर मध्ये शिजवून घ्या.

. एका जाड बुडाच्या पातेल्यात शिजलेली डाळ, गूळ घालून एकत्र करा आणि मंद आचेवर मिश्रण घट्ट होईपर्यंत शिजवा. मिश्रण मधे मधे ढवळत रहा म्हणजे पातेल्याला चिकटणार नाही.

. मीठ आणि खवलेला नारळ घालून मिश्रण एकत्र करा.

. मिश्रण सुकत आले की गॅस बंद करा आणि वेलची पावडर घालून मिश्रण थंड करण्यास ठेवा. हे पुरण पोळी सारखं पुरण आहे पण ह्यात नारळ घातला आहे.

. एका बाउल मध्ये मैदा आणि एक चिमूटभर मीठ घ्या. त्यात पाणी घालून डोश्याच्या पिठासारखे भिजवा.

. पुरणाचे छोटे गोळे करून घ्या.

. एका कढईत तेल / तूप गरम करा

. पुराणाचे गोळे मैद्याच्या मिश्रणात बुडवून गरम तेलात मंद आचेवर सोनेरी रंगावर तळून घ्या.

. गरमागरम सुकरुंडे साजूक तुपाबरोबर खायला द्या.

१०. हा स्वादिष्ट पदार्थ नक्की बनवून पहा आणि त्याला विस्मृतीतून बाहेर काढा.

टीप

. जर तुम्हाला नारळ घालायचा नसेल तर गुळाचे प्रमाण कमी करा.

. पिठासाठी मैद्या ऐवजी बेसन वापरू शकता पण मैदा वापरून चव जास्त छान लागते.
