Mulyachi Bhaaji with no Oil / Ghee (मुळ्याची भाजी तेल / तूप विरहित ) – Radish Subji – With No Oil / Ghee / Butter

मुळ्याची भाजी – तेल / तूप विरहित मराठी

Subji cooked without using a drop of Oil / Ghee are not very common. This Goan recipe of Radish Subji does not use any oil / Ghee / Butter. Still the subji is tasty. It uses Radish, Radish Greens (leaves) and Tuvar Dal (Split Pigeon Peas). Only Green Chilies, Jaggery, Fresh Coconut and Salt is added for taste. The subji tastes amazing. If you want a tasty change from the regular spicy subjis, do try this out. One important tip for this recipe – ensure the Radish Greens and Radish are Tender. Else they take very long to cook and also don’t have a good taste.

I learnt this recipe from my Mother-in-Law.

Ingredients (Serves 3)

Radish Greens (Leaves) of about 4-5 Radish (make sure the Greens are tender)

Radish 2 medium size

Tur Dal (Split Pigeon Peas) ¼ cup

Fresh Scraped coconut 2 tablespoon

Green Chilies 2-3

Jaggery 1-2 teaspoon (adjust as per taste)

Salt to taste

Instructions

1. Wash and soak Split Pigeon peas in water for 4-5 hours.

2. Wash and finely chop Radish Greens and Radish. Chop Green Chilies into 2 inch long pieces and give a lengthwise slit to each piece.

3. Add little more than ½ cup water in a pan and boil it. Drain water from soaked Split Pigeon Peas and add to the boiling water. Cook on low flame till Peas are half cooked. Stir regularly and add water if required.

4. Add chopped Radish Greens and Radish to the pan. Add chili pieces to the pan. Mix.

5. Cook covered till Peas are cooked properly. Sprinkle some water if mixture is too dry.

6. Add Jaggery, Salt and Fresh Scraped coconut. Mix well.

7. This is a dry subji. So adjust water accordingly.

8. Tasty Radish Subji without Oil / Ghee is ready. Serve hot with Indian bread.

मुळ्याची भाजी तेल / तूप विरहित Radish Subji With No Oil / Ghee / Butter

आपल्या स्वयंपाकात फोडणीला फार महत्त्व आहे. अजिबात तेल / तूप न घालता फार कमी भाज्या केल्या जातात. माझ्या माहितीत फक्त ऋषींची भाजी अशी करतात. पण ही मुळ्याची भाजी एकही थेंब तेल / तूप /लोणी / बटर न घालता करतात. ही गोव्याकडची रेसिपी आहे. मी सासूबाईंकडून शिकले. ह्या भाजीत मुळ्याच्या कोवळा पाला आणि कोवळे मुळे दोन्ही घालतात. पडखळण म्हणून तुरीची डाळ. आणि चवीसाठी हिरवी मिरची, गूळ, नारळ (गोव्याच्या भाजीत हा लागतोच) आणि मीठ. अगदी कमी साहित्यात होणारी ही पौष्टिक भाजी चवीला छान लागते.

एकच महत्त्वाची टीप म्हणजे मुळ्याचा पाला आणि मुळे कोवळे घ्या. जून पाला आणि मुळे नीट शिजत नाहीत आणि त्याची चवही चांगली नसते.   

साहित्य (३ जणांसाठी)  (१ कप = २५० मिली)

५ मुळ्यांचा  कोवळा पाला

२ मध्यम आकाराचे कोवळे मुळे

तूर डाळ पाव कप

ताजा खवलेला नारळ २ टेबलस्पून

हिरव्या मिरच्या २

चिरलेला गूळ १२ टीस्पून

मीठ चवीनुसार

कृती

. तूरडाळ धुवून ४५ तास पाण्यात भिजवून ठेवा.

. मुळ्याचा पाला आणि मुळे बारीक चिरून घ्या. हिरव्या मिरच्यांचे मोठे तुकडे करून मधे उभी चीर द्या.

. एका कढईत अर्धा कप पेक्षा थोडं जास्त पाणी गरम करा. तुरडाळीतलं पाणी काढून टाका. कढईतलं पाणी उकळलं की त्यात डाळ घाला.

. मंद आचेवर डाळ अर्धवट शिजवून घ्या. मधे मधे ढवळा. जरूर असेल तर आणखी थोडं पाणी घाला

. कढईत मुळ्याचा चिरलेला पाला आणि चिरलेले मुळे घाला. हिरव्या मिरच्यांचे तुकडे घाला.

. झाकण ठेवून मंद आचेवर डाळ शिजेपर्यंत शिजवा. मधे मधे ढवळा. जरूर असेल तर थोडं पाणी शिंपडा.

. गूळ, मीठ आणि नारळ घालून भाजी ढवळून घ्या.

. ही भाजी सुकी असते. त्यानुसार पाणी कमी / जास्त आटवा.

. मुळ्याची पौष्टिक चविष्ट भाजी तयार आहे. गरम भाजी पोळी / भाकरी सोबत खायला द्या.
