संत्र्याचा भात मराठी

In our house, no-one except my Mother-in-law likes Oranges. Someone gave us 8-9 Oranges. I gave away a few to my helper. A few were consumed. But I had to use the rest in some way. So I tried making sweet Orange Rice. As always, I read a few recipes and created my own recipe. Now-a-days my son avoids sugar so I had to use Jaggery for sweetness. The Orange Rice came out so delicious and flavorful that everyone loved it. Now I’ve one more sweet recipe for festive days.

Ingredients (Serves 4) (1 cup = 250ml)

Raw Rice 1 cup
Oranges 4
Crushed Jaggery about 1 cup
Scraped
Coconut 1 cup
Cashew
Nuts 10-12
Desi Ghee (Clarified butter) 3-4 tablespoons
Saffron 4-5 strands
Cloves 4
Salt
¼ teaspoon

Instructions

1. Peel Oranges. Remove seeds and inner thin skin also. Make 2 pieces of each carpel (segment).
2. Wash rice. Soak saffron in 1 teaspoon of hot water.
3. Using a blender make a juice of half the orange carpels. Strain the juice.
4. Add orange juice and cloves to the rice. Add sufficient water, little salt and cook the rice. I use rice cooker for cooking rice. Rice should be soft by not sticky.
5. Leave the rice to cool.
6. In a pan add 1 tablespoon of ghee and fry cashew nuts. Take them out in a plate.
7. In the same pan add coconut and jaggery and saute it on low flame till jaggery melts. Add ¾ th of orange carpels and mix it.
8. Add cooked rice, salt and mix it well.
9. Add saffron, orange carpels and cashew nuts and mix.
10. Sprinkle some water and cook covered for 3-4 minutes.
11. Add remaining ghee and mix.
12. Super delicious orange rice is ready. Serve hot.

Note

1. You can use Sugar instead of Jaggery.

संत्र्याचा भात (Orange Rice) – स्वादिष्ट पक्वान्न पांढरी साखर न घालता

आमच्या घरी संत्री फक्त सासूबाई खातात. मला एकाने ८९ संत्री दिली होती . त्यातली काही मी माझ्या मदतनीस बाईंना दिली. काही खाऊन संपवली. पण उरलेली संत्री कशी संपवायची याचा विचार करत होते. तेव्हा मला संत्र्याचा भात करायची कल्पना सुचली. नेहमीप्रमाणे १२ रेसिपीज वाचल्या आणि माझी स्वतःची रेसिपी बनवली. हल्ली माझा लेक साखर खाणं टाळतो त्यामुळे गूळ घालणं जरुरीचं होतं. हा संत्र्याचा भात एवढा स्वादिष्ट झाला की सर्वांनी अतिशय आवडीनं खाल्ला. आता सणासुदीला करायला आणखी एका पक्वान्नाचा पर्याय मिळाला.

साहित्य ( जणांसाठी) (१ कप = २०० मिली )

तांदूळ १ कप

संत्री ४

चिरलेला गूळ अंदाजे १ कप

ताजा खवलेला नारळ १ कप

काजू १०१२

साजूक तूप ३४ टेबलस्पून

केशर ४५ काड्या

लवंग ४

मीठ पाव टीस्पून

कृती

. संत्री सोलून घ्या. फोडींची पातळ सालही काढून टाका आणि प्रत्येक फोडीचे दोन तुकडे करा.

. तांदूळ धुवून घ्या. केशर १ टीस्पून गरम पाण्यात भिजवून ठेवा.

. अर्धे संत्र्याचे तुकडे मिक्सरमध्ये घालून त्याचा रस काढून घ्या. रस गाळून घ्या.

. तांदुळात लवंग, संत्र्याचा रस, किंचित मीठ आणि जरुरीप्रमाणे पाणी घालून भात करून घ्या. भात मऊ मोकळा झाला पाहिजे. मी हा भात राईस कुकर मध्ये करते. त्यात भात छान होतो.

. भात गार होऊ द्या.

. एका कढईत एक टेबलस्पून साजूक तूप घालून त्यात काजू मंद आचेवर तळून घ्या. ताटलीत काढून ठेवा.

. त्याच कढईत नारळ आणि गूळ घालून मंद आचेवर परतून घ्या. गूळ वितळला की संत्र्याच्या तुकड्यातले पाऊण तुकडे घाला आणि ढवळून घ्या.

. कढईत शिजलेला भात घाला, मीठ घाला आणि मिश्रण ढवळून घ्या.

. आता केशर, संत्र्याच्या फोडी, काजू घालून ढवळून घ्या.

१०. थोडं पाणी शिंपडून झाकण ठेवून मंद आचेवर ३४ मिनिटं वाफ काढा.

११. उरलेले तूप घालून भात ढवळून घ्या.

१२. अप्रतिम स्वादाचा संत्र्याचा भात तयार आहे. गरम गरम भाताचा आस्वाद घ्या.

टीप

. ह्या भातात गुळाऐवजी साखर घालू शकता.
